Bean Soup

  • 2c mixed beans
  • 64oz vegetable broth
  • 1c onion
  • 1c celery
  • 1c carrot
  • 1c bell pepper
  • 1tsp dried basil
  • 1clove garlic
  • 1T olive oil 
  • 1 bay leaf
  • 1/2t Italian seasoning
  • 1 can canned tomatoes
  • salt & pepper to taste
Soak beans overnight in water, then rinse and drain.  Combine with 4c broth.  Cook everything else in a pan until soft, then combine.  Simmer for 1 hour, adding more broth as necessary.

No-soak: Add beans to boiling water, cook at moderate heat for 2 minutes, remove from heat and soak for 1 hour.
